
Crunchy Tuna and Corn Salad 🌽🐟

Sometimes you don't want to spend hours in the kitchen, but you still want something tasty and balanced. This salad is my go-to for a quick lunch: it comes together in less than 10 minutes, with supermarket ingredients... and a generous drizzle of olive oil to liven things up.
Ingredients (for 2 people)
- 1 can of Saupiquet tuna (natural or in oil)
- 1 small can of Green Giant corn
- 1 can of hearts of palm or artichokes
- 1 very ripe tomato (or a few cherry tomatoes)
- 1/2 cucumber
- 1 small can of pitted black olives
- 1/2 red onion or a few spring onion rings
- A few leaves of lettuce, arugula or a mixture of young shoots
- Olive oil, balsamic vinegar or lemon
- Salt, pepper
Preparation
- Drain the Saupiquet tuna and crumble it into a salad bowl.
- Drain the Green Giant corn, hearts of palm or artichokes, and cut them into pieces.
- Dice the tomato and cucumber, slice the red onion.
- Mix everything in the salad bowl with the salad leaves.
- Season with olive oil, vinegar or lemon juice, salt and pepper.
- Serve chilled, with a few croutons or toasted garlic bread if desired.
💡 Freshness tip : Add a little flat-leaf parsley or chives for a herby flavor, or even a few cubes of feta for a creamy touch.
