Small spelt, a distant ancestor of wheat, is distinguished by its remarkable nutritional values thanks to its richness in proteins, fibers and minerals, as well as its reduced gluten content which makes it an excellent alternative to traditional wheat. This T110 wholemeal flour, hand-ground using a slow and gentle stone mill process without heating, retains almost all of the grain's nutrients while keeping its nutritional qualities intact. Its subtle nutty flavor, soft texture and beautiful golden color when cooked make it a perfect ingredient for making homemade breads, cakes, pies or pancakes.
