This organic rye flour is grown and milled using traditional methods using an Astrié stone mill by Norman millers, using a traditional method of slow grinding without heating, which preserves the cereal's nutritional qualities and flavor. Its T130 wholegrain milling process preserves almost all of the grain's nutrients (almond, germ, and bran), providing a particularly richness in fiber and minerals superior to wheat flour, with a characteristic rustic and full-bodied flavor. This local flour is perfect for making dense breads, dry biscuits, or gingerbread, bringing character and richness to all preparations, whether used alone or mixed with a milder wheat flour.
