Extra virgin olive oil mechanically extracted cold (formerly first cold pressing) with low acidity composed of picual and hojiblanca grape varieties picked at the beginning of the campaign (a green fruitiness richer in antioxidants) and from "organic" farming (without treatment of olive trees - ECOCERT certified). This olive oil is guaranteed pressed this year, which is essential to benefit from all the benefits of this fresh product, and quite rare on the market. To be consumed raw or cooked, ideal for starting with an organic olive oil "green fruitiness" and rich in taste. It is after the press, from November to March, that this oil of character ideally develops all its aromas. In summer, the aromas gradually soften and a slight bitterness can be felt, this is normal for an olive oil guaranteed fresh this year. Olive oil is a natural product that evolves throughout its life. Important: eco-responsibility: legislation imposes an expiry date of 18 months to 24 months but olive oil can be consumed until it becomes rancid (saturated with oxygen) and therefore bad in taste but without danger to health, no need to throw it away, it can be used in cooking. A slight bitterness can be felt rather in summer, while the fruitiness softens little by little. Its pulp can settle slightly at the bottom of the bottle, this is natural as in any fruit juice.

Our olive oils are extra virgin, freshly cold-pressed, and guaranteed to be from the same year's harvest. They are "fruity green," "younger," and therefore richer in antioxidants. More kilos are needed for a liter, so the health benefits increase!
