The Anicia variety is well known for its delicate nutty flavor, which makes it ideal in salads, but also original as a spread. Depending on the harvest, these green lentils come either from the QUALISOL cooperative in Gascony, or from the COCEBI cooperative in Burgundy. Green lentils are rich in vegetable protein, fiber, and minerals such as iron, magnesium, and potassium. They also provide B vitamins, including B9 (folic acid), essential for metabolism.
