WHAT I'M BITE-ING: 70% Peru Grand Cru Amazonas dark chocolate reveals tangy notes of red fruits. The cocoa is grown in cocoa plantations under forest cover in the Amazonian Piedmont. We've been working with producers from the NORANDINO and SOL Y CAFE cooperatives since 2003, implementing impactful fair trade projects. Ancient Amazonian criollo variety. ⁘ RESTORING ORGANOLEPTIC PROFILES ⁘ Like wines, cocoas have their terroir. They deliver an aromatic signature. The type of cocoa variety, the soil, the climate, the altitude, the producers' work around fermentation and drying... are all ingredients that characterize their effect in chocolate. Suffice to say that the terroir effect goes far beyond the country of origin of a cocoa. A cocoa from Peru, for example, does not display the same aromatic palette if it is grown near Piura on the northern coast of Peru or near Bagua, at the gateway to the Amazon.
More cocoa means less sugar. Only 3 ingredients with no additives: cocoa mass, cocoa butter, and cane sugar. Lecithin-free.
