CE QUE JE CROQUE : Le Grand Cru Santa Marta offre des notes boisées et d'une nuance végétale d'amande fraïche. Il se démarque par une relative douceur pour un 90% de cacao mais il sait s'enrober d'un chocolaté bien présent agrémenté d'une pointe d'épice type vanille. Les cacaoyers sont cultivés sous ombrage de légumineuses et de fruitiers dans un milieu tropical humide au pied de la Sierra Nevada. Leur savoir-faire? Ils fermentent leurs fèves de cacao pendant 2 jours sur les parcelles puis 2 jours en centre collectif. Puis les sèchent pendant 7 jours. Les membres des coopératives ANEI et RED ECOLSIERRA sont déterminés à préserver leur cacao criollo natif qui risque de disparaître en raison de sa faible productivité et des faibles marges qu'il génère. Leur cacao rémunéré à un prix équitable est un moyen de protéger leur patrimoine culturel et naturel et de récupérer leurs droits sociaux et économiques. Variété de cacao criollo natif.
